Spelt pizza dough

Makes 2–3 pizzas About 3½ hours

Method
  1. 1In a bowl, mix the yeast with the warm water, then mix in the 150g flour. Cover and leave somewhere warm for at least 30 minutes until the yeast froths.
  2. 2When the mixture has expanded, add the remaining ingredients and knead for 10–15 minutes — by hand or in a mixer with a dough hook. Wet and sticky dough is fine.
  3. 3Grease a bowl with olive oil, place the dough in and drizzle with a little more oil.
  4. 4Cover with a cloth and leave somewhere warm for 2 hours to rise.
  5. 5Gently press the air out and knead again a few times before returning to the bowl.
  6. 6Return to the warm place for a further 40 minutes.
  7. 7Pre-heat the oven to 200°C.
  8. 8Roll the dough out on a floured baking sheet, as thinly as you can.
  9. 9Spread tomato paste with the back of a spoon and add the topping of your choice.
  10. 10Bake for 10 minutes, or until golden brown.
